When our mornings are busy or hectic; a healthy breakfast is often the first thing we toss aside for something faster and more convenient. In reality, we really don't need to skip breakfast--we just need to find quick easy recipes that we can make in minutes--like this Egg & Avocado breakfast plate idea. One of our daughters is sensitive to gluten, so we typically skip bread or toast--but, we love these ingredients mashed together and spread on toast for an on-the-go breakfast too.
What are the ingredients for this Egg & Avocado Breakfast Plate?
1/4 c. Avocado, diced
1 tsp. Fresh Lime Juice
2 Hard Boiled Eggs, sliced
1 Small Roma Tomato Sliced
Sea Salt
Black Pepper
Greek Seasoning, Optional (I use Cavender's All Purpose Greek Seasoning)
Instructions for the Egg & Avocado Breakfast Plate
Prepare the Eggs & Ingredients. I generally boil eggs in bulk the night before & store them away in the shells in the refrigerator until I need them for a breakfast or salad. Simply peel and slice the Roma tomato and arrange on a plate. Dice the avocado and toss it with the lime juice to prevent darkening. Arrange the egg slices over the tomato, top with the diced avocado.
Season & Serve the Egg & Avocado Breakfast Plate. I like to sprinkle the eggs & avocado with Greek Seasoning and ground black pepper. My daughters prefer just a dash of sea salt. Simply season as desired and serve.
Note: If you are making this egg & avocado to spread on toast--simply dice all of the ingredients into a small bowl and smash the mixture together with a fork. Season and blend the spices into the mixture and spread onto toasted bread or a bagel half.
